Professional Diploma Course - Royal Icing and Piping Module
Workpiece: A Three-tiered wedding cake
Dimension: 30 cm (Width) x 30 cm (Length) x 36 cm (Height)
Upon completion of the four-day course will receive the following:

All the professional skills and techniques included in this PME Professional Diploma Course: Royal Icing and Piping Module can be implemented into creating a workpiece at a skill of competition level stage. This course is a basic entry-level course necessarily required for those who wish to enter competitions in the future. This course is suitable for those who have some basic experience of royal icing, for whom the learning progress will be more complete and faster. If you are a beginner who wants to take this course, it is recommended to take the one-day basic level course, but as long as you have a lot of patience and persistent, knowing that you will be attending a four days class full of royal icing, the number of working hours per day may last as long as 8 hours or even longer, so be prepared and stay healthy both physically and psychologically. You are welcome to join this course. Remember please don’t schedule any appointment after the finish time, make sure you have plenty of time for learning.
◆Preparation and preservation of royal icing.
We will provide our royal icing recipe for business purposes and competition award winning purposes, and recipe suitable for dropline works. At least two or more recipes of Royal Icing will be used in this course.
Comparison and difference between various kinds of powdered sugar, so that you can freely apply it on biscuits or cakes in the future.
◆Royal icing consistencies determinations and adjustments.
A variety of royal icing consistencies, how to determine and adjust the suitable consistencies for what kind of technique when applying royal icing decorations on cake designs. In order to complete a marvellous cake design, incorrect consistencies will add difficulties to the task even with correct techniques.
◆Custom-made piping bags.
In addition to the commercially available disposable or reusable piping bags, you can also make them by yourself. Choosing your own size and materials according to your own preferences.
◆Fondant colouring and covering cakes with fondant.
Colour your fondant with your own preferences. The method to quickly cover the cake with different shapes, including round and polygon
◆Demonstration of coating cake surface with royal icing.
Before the fondant was introduced into the market, royal icing was used traditionally as one of the decorative techniques for coating the cake for decorative cake design. This particular technique requires a tremendous amount of time therefore only will be demonstrated by the instructor only instead of hands-on practice by students.
◆Basic piping techniques and a variety of icing tube applications.
Piping dots, drop lines, water droplets, shells, scrolls, C and S scrolls, letterings, inscriptions.
With different hand movement and piping pressures, you can create a variety of piping combinations. To create your own unique design, start from here and lay the foundation for yourself. It is also vital to have a solid fundamental skill when you wish to design any beautiful royal icing cake decoration for commercial purposes, celebration event, personal purpose or any special occasions. Piping beautiful words or phrases on a cake also requires good and solid skills.
◆Advanced Over Piped Borders technique
Adding basic piping techniques together, and mix them in a variety of ways, you can create more gorgeous and elegant decorative effects.
◆ Pressure piped floral designs
4 different blooming stages of flower - big rose, fully open, slightly open, flower bud. The strength of the hands is applied different accordingly, to present different blooming stages, and of course, the leaves are the perfect supporting role. Whether it is decorated on cakes or biscuits, the technique will have a 3D effect which immediately upgrades your cake design to another level.
◆String works, Extension Works, Oriental string work,Bridges Works Border designs
These piping techniques are commonly used in most major sugar art cake competitions. It requires a high degree of concentration and stability.
Laces and all sorts of designs. Creating countless arrangement and patterns using royal icing off-pieces will definitely add surprising effects to the finishing touch of the complete work.
With the correct icing consistencies and applying methods, it can perfectly display the delicate effect of gradation, which is commonly used in various themes of flowers, lace, and feathers, etc.
Quickly mass-produced patterns, shapes, or letters and scripts. You can even make your own stencils. Included in the PME tool kit there are 3 different types of stencils for you to make your own decorations by using these easy-to-use tools
◆Multi-tier cake design
Learned all the techniques, apply your creative ideas to your own cake design. Using different patterns, different shapes in each tier, how to place in the centre on top of each other, symmetrically aligning methods. These tips will help complete a unique work
◆Preserving the work.
Many details are to be taken into consideration when securing the finished work during moving or displaying or preserving the cake for a long period of time.
For the purpose of preserving the project for a longer period of time, polyfoam (styrofoam) will be used instead of real cake. Included in the course fee, simple plastic packaging will be provided free of charge for students to take their project home. If you need to purchase a custom-made acrylic display container for safer and longer storing and transferring purposes, please notify us in advance, an additional cost of NT$2500 will be charged.
